PREPARATION
- Melt butter in a large saucepan. Sauté onions and garlic until the onions are golden brown.
- Dice squash and potato and add to pan. Cook for another minute.
- Add the vegetable broth and bring to a boil. Reduce heat and let simmer for 20 minutes. Season to taste with salt and pepper.
- Transfer to a blender and blend until smooth and creamy.
- Serve with pumpkin seeds and drizzle with Le Grec Ranch Dressing.
