2 carrots, peeled and diced -
1 potato, peeled and diced -
2 minced garlic cloves -
1 diced onion -
2 796ml cans of Italian tomatoes -
2 cup chicken broth -
2 tea spoon olive oil -
- Salt and pepper, to taste -
1 table spoon Le Grec Rancher’s dressing -
              
              

PREPARATION

              
                    
  • In a cauldron, boil the potato.
  • In a large saucepan over medium heat, cook the carrots, onion, and garlic in the oil.
  • Add the tomatoes and the broth.
  • Bring to the boil and simmer everything for about 8 minutes.
  • In a blender, purée the soup until smooth.
  • Adjust seasoning to taste.
  • Serve with a drizzle of Rancher’s dressing.
