PREPARATION
- In a cauldron, boil the potato.
- In a large saucepan over medium heat, cook the carrots, onion, and garlic in the oil.
- Add the tomatoes and the broth.
- Bring to the boil and simmer everything for about 8 minutes.
- In a blender, purée the soup until smooth.
- Adjust seasoning to taste.
- Serve with a drizzle of Rancher’s dressing.
