Greek-Style Rack of Lamb

| 1 rack of lamb (about 1½ lbs) |
| 2 1/2 tbsp Le Grec Authentic dressing |
| 2 sprigs of fresh rosemary |
              
              

PREPARATION

              
                    
  • Preheat the oven to 400°F and place the rack in the center.
  • Meanwhile, in a hot skillet, sear the fatty side of the lamb rack for 3 to 4 minutes until golden.
  • Remove from heat and brush 2 tbsp of the Le Grec Authentic dressing evenly over the meat.
  • Line a baking sheet with parchment paper and place the lamb rack on it. Roast for 30 minutes.
  • Remove from the oven and let it rest for 10 minutes
  • Spread the remaining dressing onto a plate, using the back of a spoon to create a swirl. Place the lamb on top of the dressing. Serve and enjoy!
