
Clean-Out-the-Fridge Quesadillas

2 tbsp Le Grec Homestyle dip

1 tbsp olive oil
|
|
1 cup yellow bell peppers
|
|
1/4 cup red onions
|
|
540 ml black beans
|
|
4 tortillas (2 per quesadilla)
|

1 cup shredded Tex-Mex cheese
|
|
Taco seasoning, to taste

PREPARATION
- Sauté the oil, onions, peppers, and taco seasoning over medium-high heat for 3 minutes. Add the black beans, half of the Le Grec Home Style dip, and the cheese. Cook for another 5 minutes, stirring well, then set aside.
- In the same pan, place one tortilla, spread the remaining dip in the center, and evenly add the quesadilla mixture on top.
- Cover with the second tortilla.
- Grill one side, flip carefully, and grill the other. Remove from heat, cut into quarters, and serve with avocado slices ?
- A simple, low-waste recipe!
