1 butternut squash -
1 large white onion -
2 cloves garlic -
1 potato -
1 cup vegetable broth -
- Le Grec Ranch Dressing -
1 table spoon butter -
              
              

PREPARATION

              
                    
  • Melt butter in a large saucepan. Sauté onions and garlic until the onions are golden brown.
  • Dice squash and potato and add to pan. Cook for another minute.
  • Add the vegetable broth and bring to a boil. Reduce heat and let simmer for 20 minutes. Season to taste with salt and pepper.
  • Transfer to a blender and blend until smooth and creamy.
  • Serve with pumpkin seeds and drizzle with Le Grec Ranch Dressing.
